IN SEARCH OF LOST DISHES: 20 YEARS OF 3 MICHELIN STARS

Join us as we celebrate 20 years of Le Calandre's 3 Michelin stars. In honour of the special occasion, Max has pulled dishes out of the archives so that we can taste, or re-taste, the history of the restaurant. 

The next "In Search of Lost Dishes" dinner will be held at Il Calandrino on Thursday, June 30th and Friday, July 1st. 

Here is a sneak peak at the menu. 

IN SEARCH OF LOST DISHES MENU

Al-Aimo

Lavender and melon risotto 

Breaded but not cooked beef filet
with red beets and spiced egg sauce

Lamb and eggplant cotoletta
with basil, caponata and mind grattachecca
Peach with olive oil

Sour cherry sorbetto with semiliquid chocolate cream
cassis powder and a cannolo filled with chocolate smoked tea gelato

“Over the past 20 years, Max has come up with countless dishes. Many of which have defined the success of Le Calandre, but no longer exist, except in our memory, in that of our clients, or in some long-lost article or book.
 
The kitchen of a highly creative chef is constantly evolving, it’s in perpetual motion because it’s the fruit of the chef's soul, thought, maturity and contemporaneity.

It is therefore difficult to limit a creative cook to replicate a dish he or she made 10, 15, 20 years ago.  What’s in the past is past.



However, if we look at the "classic" dishes of Le Calandre, which we have always kept on the menu, such as the cuttlefish cappuccino or the saffron risotto with licorice powder, and we look at how many variations of the same dishes Max has proposed in the menu. these years, just how true this is.



But life is also made up of memories and that is why I asked Max, on occasion of the twentieth anniversary of the 3 Michelin stars, to host a series of dinners at Il Calandrino with the dishes that have defined Le Calandre.
