Spaghetti "alla chitarra" has a square cross section, rather than round and takes its name from the guitar-like strings used to cut the fresh pasta.
All of our durum wheat pasta is made for us exclusively by Verrigni, a small pasta company that has been making pasta the old-fashion way since 1898. The dough is passed through gold dies, making it more porous and aromatic resulting in some pretty delicious pasta.
