EASTER "CALANDRA" I CHOCOLATE SWEET BREAD

In Italy, Easter is traditionally celebrated with a dove-shaped sweat leavened bread called colomba. Max Alajmo and his team of pastry chefs have begun baking this year’s collection of Easter breads, including a special chocolate version made with “pisto napoletano,” a mix of Neapolitan spices.
We call our Easter breads Calandre, a small migratory bird, rather than Colombe as a play on the name our flagship restaurant.

Note: All our leavened products are made using a sourdough starter and are allowed to rise naturally at low-temperature using two-phase leavening process. As a result, our panettoni are fully-leavened and particularly aromatic. Because we don't use any artificial colors, preservatives or hydrogenated fats, they have an expiration date of two months.
