CUISINE

Lightness, depth of flavor and fluidity make up the foundation of Max's cuisine. Inspiration for his distinctive dishes comes from looking at the world with a childlike curiosity and sense of discovery, as well as his continuous and in-depth research of ingredients.

Menu

Guests can choose between three tasting menus or choose 3, 4 or 5 courses from the various menus. The "Classici" tasting menu features our signature dishes from over the years, while the "Max" and "Raf" menus change with the seasons.

WINE LIST

Our wine list is in continuous evolution thanks to our desire to discover and visit producers from wine making regions in Italy and around the world. Our sommelier, Matteo Bernardi, oversees a talented young team of wine professionals eager to assist you in discovering a new wine or rediscovering a classic.

TEAM

Professionalism, team spirit and friendship are the key ingredients of the Le Calandre team. In the kitchen, Max works alongside his sous chef Michele Cremasco and a select group of young, aspiring chefs. The front of the house is run by Giandomenico Ruggiero, together with the restaurant's talented sommelier Matteo Bernardi.

Dining room

When designing Le Calandre, the Alajmo brothers sought to create a multisensory atmosphere in the dining room to highlight Max's playful cuisine. Everything from the wooded tables sculpted from a 300 year old ash oak tree, to the hand-blown glassware, were designed by the Alajmo brothers in collaboration with artisans from across Italy.

History

The heart and headquarters of the Alajmo group, Le Calandre was originally opened in 1981 by Erminio Alajmo and Rita Chimetto. In 1994, their two sons took over with Max in the kitchen and Raf in the dining room. In 2003, the restaurant is awarded three Michelin stars, making Max, at 28 years old, the youngest chef in the world to have received the recognition. Since 2006, the restaurant is part of the "The World's 50 Best Restaurants".

No shorts or sandals for men.

We love children, but we also love a quiet dining room, therefore we do not accept children under 8 in our main dining room. Younger children are invited to dine in our priviate dining room, when available. Also, please note that do not have high chairs or booster seats. If you decide to bring the children with you, we ask you to pay the utmost respect of the other guests.

Pets are not allowed in the restaurant. If you have a special request, please contact us ahead of time.
