The smile, our first ingredient
The letter "J" in the Alajmo surname is a rarity in Italy, a graphic quirk that over time has blossomed into a smile.
It's not just a logo, it's a promise: the welcome that precedes the dish, the joy that lingers after the last bite. It's a profound connection between our family's history and the hearts of those who still allow themselves to be amazed by good things.

Massimiliano Alajmo
He grew up in the kitchen of Le Calandre, where at just five years old he helped his mother Rita with the simplest preparations, such as biscuits, moving among the chefs with the dream of one day wearing their uniform.
At twenty, he took over the kitchen of the family restaurant and, just eight years later, at just twenty-eight, he earned three Michelin stars, becoming the youngest chef in the world to have received this recognition.
He has been called the "Mozart of the kitchen." Like music, his cuisine also flows in the sense that it is linked to water as a bearer of memory along its journey and a regenerating force. It is a journey in search of the origin, where authenticity rejects the futile.

Raffaele Alajmo
Born in Padua in 1968, he began his career working alongside his father Erminio in the dining room at Le Calandre, as a sommelier.
In 1994, he took over the management of the restaurant together with his brother, chef Massimiliano, with the aim of making it one of the best in Italy. Their commitment was recognized on November 27, 2002, with the awarding of three Michelin stars. Since 2006, Le Calandre has been a regular on the list of The World's 50 Best Restaurants.
In 2004, together with his brother Massimiliano and Dr. Stefano Bellon, he founded the non-profit organization Il Gusto per la Ricerca, which aims to support organizations that finance scientific research in the field of childhood cancer and facilities that house children in serious conditions.
After leading Le Calandre for over twenty years, Raf expanded his business activities, becoming its driving force. Today, he is the Group's CEO and maître des lieux.

Laura Alajmo
Sister of Max and Raf, with her simplicity and elegance, she represents a natural balance between their creative visions. She authentically embodies the Alajmo style and represents its values in her role as a product brand ambassador. She is also the smiling face that welcomes guests for breakfast at Il Calandrino.

Giovanni Alajmo
Raffaele's son, he represents the fourth generation. He grew up learning the trade where it truly began: at the table, amidst family gestures.
From managing Ristorante Stern in Paris to the heart of Venice, today he is one of the Group's two Heads of Hospitality Operations and Brand Ambassadors for the Restaurants/Hospitality side.

Erminio Alajmo & Rita Chimetto
Erminio: a waiter at just 18, an entrepreneur for life. He opened three restaurants and earned three Michelin stars in three different locations. The man who had the courage to hand over the keys to his children, barely twenty years old, and step back to watch the future blossom.
Rita: self-taught out of necessity, a revolutionary by nature. She is among the first Italian female chefs to receive a Michelin star. A pastry chef by passion, she was the first to introduce miniatures to Padua and codified the recipe for Pazientina, a typical Paduan dessert. She taught Max that lightness is a value and that oil can replace butter without sacrificing poetry. Today, in the MammaRita Lab, her hands continue to pass on secrets that no school can teach.
