Mamma Rita, Le Calandre's first chef and a passionate pastry chef, instilled in Massimiliano a philosophy of simplicity, attentiveness to ingredients, and naturalness. Thanks to her teachings and example, Max has built his own grammar of taste.
From this legacy, MammaRita Lab was born. Opened in 2018 in Rubano, a few steps from Le Calandre, it is the Alajmo Group's production center, an ecosystem where research, development, and craftsmanship coexist. It is a space designed to supply all the establishments with sweet and savory preparations and where the line of leavened products based on lightness, naturalness, and the exaltation of flavor comes to life.
