The cuisine we pursue follows the breath of the raw ingredients and the power they contain, hence the "in.gredients" philosophy; from the Latin "in gredi", which means to pass through, to penetrate the matter, to listen to it. It is the ingredients that dictate the path, and in that sense, we make ourselves available to be carried away and to experience a journey of lightness, depth, and fluidity.
Lightness is functional to research; in its highest sense, it elevates us, depth compels us to seek its essence, while fluidity accompanies us in a movement that we now define as natural.
