What is Suono n'uovo?
It's a dish that joined the menu at Le Calandre in 2024, but even before that, it's a quest, a journey, an immersion in
material.
At its center is the egg, a representation of perfection and completeness, a symbolic and fundamental ingredient in cuisine. Recipes often call for "whole" eggs, and this is where Max's reflection begins: with or without the shell?
From a dough made with the entire egg, whose shell is removed from its internal membrane and sanitized, a fresh pasta is born that is smoked, seasoned with butter and celeriac extract, sprinkled with crumbled aromatic herbs, and accompanied by a Castelmagno fondue and a double chicken broth. Obedience in disobedience, the beginning of a true journey, a completely new tasting opportunity.
The journey
From a purely gustatory point of view, the experience can seem strange. A traditional preparation like pasta is altered, during its drawing, by the presence of the shell dispersed into small, crunchy fragments,
apparently unrelated.
If, however, one immerses oneself at a deeper sensorial level and moves on to listening, to the perception of sound, a completely new dimension opens up in which every rule is overturned.
By closing one's eyes, one's attention shifts and the tasting is internalized, arriving at the understanding of how flavor is a vehicle that leads to the exploration of more intimate and personal emotions.

This exploration concerns the child's initial awareness of the use of sensoriality, which fixes in his memory a series of information linked to emotions and emotional states that recur in adult life every time these experiences are relived.
