CARNIVAL WITH ALAJMO
For us at the Alajmo group, Carnival in Italy is synonymous with indulging in the traditional holiday sweets, even if ours are prepared to be particularly light. Every preparation takes shape in our MammaRita pastry lab and is prepared following the precious teachings of Rita, mother to Massimiliano, Raffaele, and Laura.
Our selection of Carnival fritters, traditionally served in Venice, includes the following fillings:
Hazelnut pastry cream
Pistachio pastry cream
Chocolate hazelnut pastry cream
Grand Marnier cream
Tiramisu cream
Zabaione pastry cream
And the typical Venetian variety with pine nuts and raisins in the batter.
At Il Calandrino, on the weekends, you can find them in an even lighter version, made with the rice flour in the dough. We also invite you to discover, on Saturdays and Sundays, Mamma Rita’s battered and fried apple slices, a simple and delicious Carnival treat.
In addition to the selection of fritters or fritelle, our team of pastry chefs is busy preparing Mamma Rita’s special recipe for crostoli, or fried sheets of dough. The dough is rolled out to make it as thin as possible. The secret lies in careful frying, only 4-5 crostoli at a time in a small saucepan, for a uniform and quick cook that prevents the dough from absorbing too much oil. Golden, light, crispy, and served with a veil of sugar, one leads to another!
