"Ciò che diventa era", or what once was will be again, is a return to the origins of wine making. This particular wine is obtained by pressing grapes of the Glera varietal and allowing them to referment in the bottle on their own yeasts, or lees, without disgorgement. The result is a sparkling and unfiltered wine. This second edition has notes of pear and hawthorn.
